Cuantificación de los diferentes folatos presentes en tomatillo (Physalis ixocarpa) por cromatología de líquidos de alta resolución
Quantification of folates in Physalis ixocarpa by high pressure liquid chromatography

En este estudio se identificaron y determinaron las diferentes especies de folatos por medio de cromatografía liquida de alta resolución en fase reversa, con detección de fluorescencia, aunado a un tratamiento trienzimático. La deconjugación de las cadenas de glutamatos en los folatos se realizó mediante una columna de afinidad a folatos. La cantidad promedio de folatos fue de 1.2 μM/100 gramos de peso fresco. La composición de las principales estructuras de folatos presentes en Physalis correspondió a 5-metil- tetrahidrofolato, tetrahidrofolato y 5-formil-tetrahidrofolato. La valoración de estos importantes metabolitos dentro de la dieta se ha soslayado debido a la dificultad implícita en su análisis. Es evidente que la falta de esta vitamina está implicada en el riesgo de defectos del tubo neural y anencefalia, principalmente en embarazos no deseados, donde no se consume una dieta adecuada de suplementos antes de la concepción. Este problema puede ser disminuido con la ingesta de fuentes de folatos en la dieta como Physalis ixocarpa.
