Abstract

Stress in meat animals has an important effect on the quality of meat and other animal products. The most common problem in the meat industry is the presence of pale, soft and exudative meat which characteristics are considered of low quality for the processors and consumers. In this review a brief account of the stress methodology and its interaction with physiology and animal behaviour is presented. The stress related hormones, their origin and some possible diagnosis techniques are described. We make emphasis on the muscle related hormones and their main effects on animal physiology. Glucocorticoid, cortisol, serotonin, dopamine and ß-adrenergic hormones are described in detail, as well as their main characteristics and effects on the live organism.
