Abstract

Pinole is a pre-Hispanic food that is obtained from the roasting of whole corn kernels and their subsequent milling. This roasted corn powder can be added with different ingredients that give it different flavor and aroma characteristics, as well as nutritional and physicochemical properties, among others. Pinole, is commonly consumed as a cold or hot drink (atole), and was an important part of the development of different Mesoamerican cultures. Today it is known as a traditional Mexican food that has been adapted to the different needs and customs of different regions of Mexico. The consumption of this product has been decreasing due to its relationship with temporality and high energy content. However, it is important to note that these products have significant content of dietary fiber and different bioactive compounds. Also, the addition of new ingredients high in proteins or antioxidants in the reformulation of this product, generate novel and attractive alternatives for consumption. The objective of this report is to provide information of pinole, from its origin, way to preparation and ingredients, characteristics and different properties, and the effects of the processing (corn roasting), which is important to learn more about this traditional Mexican food.
