In current years and in response to consumer needs, the consumption of functional foods has increased. Among these foods are foods containing prebiotics and probiotics. However, currently, two new terms have been included, paraprobiotics and postbiotics: the former are inactive or non-viable microbial cells, while postbiotics are soluble factors or metabolites that are secreted by living bacteria or after cell lysis. Depending on where they are produced, postbiotics are classified into microbial metabolites (enzymes, lipids, organic acids, polysaccharides and peptides/protein) and microbial compounds (cell surface proteins, lipoteichoic acid, peptidoglycan, polysaccharides and teichoic acid). The absorption of these compounds occurs in the cells of the intestine, which is where they perform their function. Currently, high intensity ultrasound (HIU) is used as a tool to obtain these compounds, because it produces a phenomenon called acoustic cavitation, which generates the growth and implosion of vapor bubbles, generating the formation of pores, also called ultrasonoporation, in a transient way in the cell membrane, allowing the exchange and release of molecules or postbiotics.
